Manuel Hernan Foronda Gallego lives and works in the Alto Cañaveral village, a community in the Buenos Aires township of Andes. With his wife and five adult children, Manuel cultivates 14,000 trees on a 5.73 hectare property, which sits at 1,894 meters above sea level. He and his wife, Blanca Ligia Baena Osorio, de-pulp coffee daily and complete the fermentation process in stainless steel tanks over 24 to 26 hours. Manuel and his family sun dry the coffee for an average of 13 days, fertilize their farm twice a year, and refrain from pesticide use, combating challenges such as coffee rust by relying “on the love I feel for growing coffee to get up and continue.”
